1 cup cream cheese, softened

½ cup honey or maple syrup

¼ tsp salt

1 cup crushed walnuts or pecans (optional)

½ cup raisins or chopped pineapple (optional)

1 cup granola for topping (optional)

Prepare the Carrots: Start by peeling and shredding the carrots using a box grater or food processor. Set aside in a large mixing bowl.

    Make the Base Mixture: In a separate bowl, blend the Greek yogurt, softened cream cheese, honey (or maple syrup), vanilla extract, cinnamon, nutmeg, and salt until the mixture is smooth and well combined.

      Combine Ingredients: Gently fold the shredded carrots into the yogurt mixture. If desired, add in the crushed walnuts (or pecans) and raisins (or pineapple), ensuring they are evenly distributed.

        Prepare the Pan: Line a square baking dish (8x8 inches) with parchment paper, allowing some overhang on the sides for easy removal later.

          Spread and Freeze: Pour the carrot cake mixture into the prepared baking dish. Spread it out evenly using a spatula. Tap the dish gently on the counter to eliminate air bubbles.
