Ingredients

For the Base:

2 cups plain Greek yogurt

1/2 cup honey or maple syrup

1 teaspoon vanilla extract

1/4 teaspoon salt

For the Cinnamon Swirl:

1/4 cup brown sugar

1 tablespoon ground cinnamon

1 tablespoon melted coconut oil or unsalted butter

For the Topping:

1/2 cup granola

1/4 cup chopped pecans (optional)

A sprinkle of additional cinnamon for garnish

Instructions

Prepare the Base: In a large mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and salt. Stir until well blended and smooth.

Make the Cinnamon Swirl: In a separate small bowl, mix together the brown sugar and ground cinnamon. Drizzle in the melted coconut oil (or butter) and mix until it forms a crumbly texture.

Layer the Ingredients: Line a 9x9 inch baking dish with parchment paper, allowing some overhang for easy removal. Pour half of the yogurt mixture into the prepared dish, smoothing it down into an even layer.

Add Cinnamon Swirl: Sprinkle half of the cinnamon mixture evenly over the yogurt base, then use a knife or skewer to swirl it lightly through the yogurt, creating a marbled effect.

Finish Layering: Pour the remaining yogurt mixture over the first layer, smoothing it out again. Sprinkle the rest of the cinnamon mixture on top. Swirl once more to combine slightly.

Add Toppings: Evenly distribute granola and chopped pecans on top of the last layer; lightly press them down to adhere.

Freeze: Cover the baking dish with plastic wrap or a lid and place it in the freezer. Freeze for at least 4-6 hours or until fully set.

Slice and Serve: Once frozen, lift the bars out of the baking dish using the overhanging parchment paper. Cut into squares or rectangles. Sprinkle additional cinnamon on top if desired and serve immediately, or place back into the freezer until ready to enjoy.

Store Leftovers: Keep any leftovers in an airtight container in the freezer for up to 2 weeks, allowing you to enjoy this treat at any time!
