2 cups plain Greek yogurt

1 cup coconut milk (canned for creaminess)

1/4 cup honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

1 cup mixed berries (strawberries, blueberries, raspberries, chopped)

1/3 cup shredded coconut (unsweetened)

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Berry Mixture: In a small bowl, combine the mixed berries with 1 tablespoon of honey or maple syrup. Gently mash the berries with a fork, allowing some juices to release. Set aside.

    Make the Yogurt Base: In a large mixing bowl, combine the Greek yogurt, coconut milk, remaining honey or maple syrup, and vanilla extract. Whisk until smooth and well combined.

      Combine for Swirling: Add the shredded coconut into the yogurt mixture and gently fold it in to avoid breaking the coconut flakes.

        Layer the Mixtures: Line a baking dish (approximately 8x8 inches) with parchment paper, allowing some overhang for easy removal. Pour half of the yogurt mixture into the dish and spread it evenly. Spoon dollops of the berry mixture over the yogurt layer, then add the remaining yogurt mixture on top.

          Swirl it Up: Using a knife or a skewer, gently swirl through the layers to create a marbled effect without fully mixing the berries and yogurt together.

            Freeze: Cover the dish with plastic wrap or a lid and freeze for at least 4-6 hours, or until fully set and firm.

              Slice and Serve: Once frozen, lift the frozen yogurt out of the dish using the parchment paper overhang. Place it on a cutting board and slice it into squares or rectangles. Serve immediately, garnished with fresh mint leaves if desired.
