Ingredients

2 cups rolled oats

1/2 cup almond butter (or peanut butter)

1/4 cup maple syrup

1 teaspoon vanilla extract

1/2 teaspoon salt

1/2 cup mini chocolate chips

1/2 cup Greek yogurt (plain or vanilla)

1 tablespoon honey (optional, for sweetness)

Pinch of cinnamon (optional)

Instructions

Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, mini chocolate chips, and a pinch of cinnamon if using. Stir well to evenly distribute.

Mix Wet Ingredients: In another bowl, mix together the almond butter, maple syrup, vanilla extract, and salt. If you'd like a bit of extra sweetness, add honey to this mixture. Stir until smooth.

Combine Mixtures: Pour the wet mixture over the dry oat mixture. Stir until everything is well combined and the oats are fully coated.

Form Into Bites: Using your hands, take small amounts of the mixture and roll them into bite-sized balls (about 1-inch in diameter). Place them on a parchment-lined baking sheet.

Add Yogurt Coating: In a separate bowl, mix the Greek yogurt with a touch of honey if desired. Dunk each oat ball into the yogurt, fully coating them. Allow excess yogurt to drip off.

Freeze: Place the yogurt-coated oat bites back on the parchment-lined baking sheet and freeze for at least 1-2 hours, until they are firm.

Store: Once frozen, transfer the bites into an airtight container. They can be stored in the freezer for up to a month.

Enjoy: Grab a few bites whenever you're craving something sweet and healthy. Enjoy them straight from the freezer, or let them thaw for a couple of minutes for a softer treat!
