Ingredients

2 cups plain Greek yogurt

1 cup fresh figs, chopped (or dried figs if fresh is unavailable)

1/4 cup honey (plus extra for drizzling)

1 teaspoon vanilla extract

1/4 teaspoon sea salt

1/2 teaspoon lemon juice

1/2 cup granola (optional, for topping)

Fresh mint leaves (for garnish, optional)

Instructions

Prepare the Figs: If using fresh figs, wash and chop them into small pieces. If using dried figs, roughly chop them as well.

Mix Ingredients: In a large mixing bowl, combine the Greek yogurt, chopped figs, honey, vanilla extract, sea salt, and lemon juice. Mix everything together until the figs are evenly distributed throughout the yogurt.

Taste and Adjust: Taste the mixture and add more honey, if desired, for additional sweetness.

Prepare the Pan: Line a small baking dish (approximately 8x8 inches) with parchment paper, leaving some overhang for easy removal later.

Pour the Mixture: Pour the yogurt fig mixture into the prepared baking dish, spreading it out evenly with a spatula.

Add Toppings (Optional): If you like a little crunch, sprinkle the granola evenly over the top of the yogurt mixture.

Freeze: Place the dish in the freezer and let it freeze for at least 4 hours, or until firm.

Cut into Bars: Once frozen, lift the mixture out of the dish using the parchment paper overhang. Cut it into bars of your desired size.

Serve: Drizzle with extra honey and garnish with fresh mint leaves before serving.

Store: Keep any leftovers in an airtight container in the freezer for up to one month.
