Ingredients

2 cups apple sauce (unsweetened)

1 cup Greek yogurt (plain or vanilla)

¼ cup honey (or maple syrup for a vegan option)

1 cup rolled oats

1 teaspoon baking powder

1 teaspoon cinnamon

½ teaspoon nutmeg

1 cup diced apples (any variety)

½ cup chopped walnuts (optional)

½ teaspoon vanilla extract

Pinch of salt

Instructions

Prepare the Apple Mixture: In a mixing bowl, combine the unsweetened apple sauce and diced apples. Set aside.

Mix Yogurt and Honey: In another bowl, whisk together Greek yogurt, honey, and vanilla extract until well combined.

Combine Dry Ingredients: In a large mixing bowl, combine rolled oats, baking powder, cinnamon, nutmeg, and salt. Stir to ensure even distribution of dry ingredients.

Mix Wet and Dry: Pour the yogurt-honey mixture into the dry ingredients, then add the apple mixture. Stir until just combined. If using, fold in the chopped walnuts for added crunch.

Shape the Muffin Disks: Line a baking sheet with parchment paper. Using a spoon or an ice cream scoop, portion out the mixture and flatten into disk shapes on the lined sheet. Aim for about ½ inch thick disks.

Freeze: Place the baking sheet in the freezer for at least 4 hours or until the disks are firm and fully frozen.

Serve: Once frozen, you can transfer the disks to a container or zip-lock bag for easy storage. Enjoy straight from the freezer as a healthy snack or breakfast on-the-go.

Optional Topping: If desired, drizzle with extra honey or a sprinkle of cinnamon before serving for an added flavor boost.

Prep Time: 15 minutes | Total Time: 4 hours 15 minutes (includes freezing) | Servings: 12 disks
