Ingredients

2 cups plain Greek yogurt

1/4 cup honey or maple syrup

Zest of 1 lemon

2 tablespoons lemon juice

1/2 teaspoon vanilla extract

1/4 teaspoon almond extract

1 cup almond meal

1 cup crushed almonds (for coating)

1/2 cup dark chocolate chips (optional, for drizzling)

Instructions

Combine Yogurt Base: In a large mixing bowl, combine the Greek yogurt, honey (or maple syrup), lemon zest, lemon juice, vanilla extract, and almond extract. Mix well until all the ingredients are smoothly incorporated.

Incorporate Almond Meal: Gradually add the almond meal to the yogurt mixture. Stir until you achieve a thick and malleable consistency. You may need to adjust the sweetness based on your preference.

Form the Truffles: Use your hands or a small ice cream scoop to form small balls (about 1 inch in diameter) from the mixture. Place the formed truffles on a lined baking sheet.

Coat with Crushed Almonds: Roll each truffle in the crushed almonds, pressing gently to ensure they are fully coated. Return the coated truffles to the baking sheet.

Freeze: Place the baking sheet in the freezer for at least 2 hours, or until the truffles are completely firm.

Drizzle with Chocolate (Optional): If you want to add a chocolate drizzle, melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth. Drizzle over the frozen truffles before serving.

Serve: Enjoy the truffles immediately or store them in an airtight container in the freezer for up to 2 weeks. Allow them to soften for a few minutes at room temperature before serving.
