Frozen Yogurt Matcha Cookie Dough Bars

For the Cookie Dough Layer:

1 cup almond flour

1/4 cup coconut flour

1/2 cup maple syrup or honey

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup dark chocolate chips or carob chips

For the Matcha Yogurt Layer:

2 cups Greek yogurt or dairy-free yogurt

1/4 cup honey or agave syrup (adjust based on sweetness preference)

2 tablespoons matcha powder (adjust based on taste)

1 teaspoon vanilla extract

A pinch of salt

For the Toppings (optional):

Crushed nuts (almonds, pistachios, or walnuts)

Extra chocolate chips

Toasted coconut flakes

Instructions
 

Prepare the Cookie Dough Layer:

    - In a large mixing bowl, combine the almond flour, coconut flour, baking soda, and salt. Mix well.

      - In a separate bowl, mix together the melted coconut oil, maple syrup (or honey), and vanilla extract until fully combined.

        - Gradually add the wet mixture to the dry ingredients and stir until a dough forms. Fold in the chocolate chips.

          - Spread the cookie dough layer evenly into an 8x8-inch (20x20 cm) pan lined with parchment paper, pressing down firmly. Place it in the freezer to set while you prepare the yogurt layer.

            Make the Matcha Yogurt Layer:

              - In a medium-sized bowl, whisk the Greek yogurt, honey (or agave), matcha powder, vanilla extract, and a pinch of salt until smooth and well combined. Adjust the sweetness by adding more honey if desired.

                Assemble the Bars:

                  - Once the cookie dough layer has set in the freezer for about 20 minutes, pour the matcha yogurt mixture over the cookie dough layer, spreading it evenly to cover.

                    Freeze the Mixture:

                      - Place the assembled bars back in the freezer and let them freeze for at least 4 hours or until solid.

                        Cut and Serve:

                          - Remove the bars from the freezer and let them sit at room temperature for about 5–10 minutes before slicing for easier cutting.

                            - Use a sharp knife to cut the frozen dessert into bars or squares. Optionally, sprinkle crushed nuts, chocolate chips, or coconut flakes on top for added crunch.
