Frozen Yogurt Raspberries & Cream Bars

Ingredients
  

2 cups fresh raspberries

1 cup unsweetened Greek yogurt

1 cup coconut cream (chilled)

1/4 cup honey or maple syrup (adjust to taste)

1 tsp pure vanilla extract

1 tbsp lemon juice

1/2 cup crushed graham crackers (for crust)

3 tbsp melted coconut oil (for crust)

Pinch of salt

Instructions
 

Prepare the Crust: In a medium bowl, combine the crushed graham crackers, melted coconut oil, and a pinch of salt. Mix until the mixture resembles wet sand.

    Press into Pan: Line an 8x8-inch square baking dish with parchment paper, leaving some overhang for easy removal. Press the graham cracker mixture evenly into the bottom of the prepared dish and set aside.

      Make the Raspberry Mixture: In a blender or food processor, combine the fresh raspberries, Greek yogurt, coconut cream, honey or maple syrup, vanilla extract, and lemon juice. Blend until smooth and creamy. Taste and adjust sweetness if necessary.

        Layer the Mixture: Pour half of the raspberry mixture over the crust in the baking dish, spreading it evenly.

          Create Swirls: Take a spoon and drizzle the remaining raspberry mixture over the first layer. Use a skewer or knife to gently swirl the mixtures together for a marbled effect.

            Freeze: Cover the baking dish with plastic wrap and place it in the freezer for at least 4 hours or until thoroughly frozen.

              Slice and Serve: Once frozen, lift the bars out using the parchment paper overhang and place them on a cutting board. Slice into bars of your desired size with a sharp knife.

                Enjoy: Serve immediately or store the bars in an airtight container in the freezer. These bars will keep their shape and flavor for up to two weeks!
