Ingredients

1 cup graham cracker crumbs

4 tablespoons unsalted butter, melted

2 tablespoons sugar

1 cup cream cheese, softened

1 cup Greek yogurt (plain or vanilla)

½ cup powdered sugar

1 teaspoon vanilla extract

1 cup fresh raspberries (plus extra for garnish)

1 tablespoon lemon juice

1 cup chocolate chips (dark or white, for coating)

Pinch of salt

Instructions

Prepare the Base: In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Stir until well mixed and resembles wet sand.

Shape the Crust: Using a muffin tin (6-cup), press the crumb mixture firmly into the bottom of each cup to form a crust layer. Place it in the freezer for 15 minutes to set.

Make the Filling: In another mixing bowl, beat the softened cream cheese until smooth. Add Greek yogurt, powdered sugar, vanilla extract, lemon juice, and a pinch of salt. Mix until creamy and well-combined.

Add Raspberries: Gently fold in the fresh raspberries into the cheesecake filling. Be careful not to crush them too much to keep chunks intact.

Fill the Cups: Once the crust has set, evenly distribute the cheesecake filling over each crust layer. Smooth the tops with a spatula and ensure each cup is filled to the brim.

Freeze the Bombs: Cover the muffin tin with plastic wrap and freeze for at least 4 hours, or until fully set.

Prepare the Coating: In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring in between until smooth and fully melted.

Coat the Bombs: Once the cheesecake bombs are frozen, carefully pop them out of the muffin tin. Dip each frozen cheesecake bomb into the melted chocolate, allowing the excess to drip off. Place them on a parchment-lined baking sheet.

Return to Freezer: Once all are coated, return the cheesecake bombs to the freezer for another 30 minutes for the chocolate to harden.

Serve: Take them out just before serving and garnish with a few fresh raspberries on top. Enjoy your delightful Raspberry Heaven Cheesecake Bombs!
