Ingredients
  

1 cup all-purpose flour

1/2 cup almond flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/3 cup granulated sugar

1/2 teaspoon vanilla extract

1 large egg

1/2 cup plain Greek yogurt (or your favorite frozen yogurt)

1/4 cup melted coconut oil

1/2 cup fresh strawberries, diced (plus extra for topping)

1/4 cup mini chocolate chips (optional)

Powdered sugar, for dusting (optional)

Instructions
 

Preheat and Prepare:

    Preheat your oven to 350°F (175°C). Grease a donut or muffin ring pan with non-stick spray or lightly brush with oil.

      Mix Dry Ingredients:

        In a medium bowl, whisk together the all-purpose flour, almond flour, baking powder, baking soda, and salt. Set aside.

          Combine Wet Ingredients:

            In a large mixing bowl, beat together the sugar and egg until light and fluffy. Add in the vanilla extract and melted coconut oil, mix until well combined. Then, stir in the Greek yogurt until smooth.

              Combine Mixtures:

                Gradually add the dry ingredients to the wet mixture, and gently fold until just combined. Be careful not to overmix. Gently fold in the diced strawberries and mini chocolate chips if using.

                  Fill the Pan:

                    Spoon the batter into the greased muffin ring pan, filling each ring almost to the top. Use a spatula to smooth the tops.

                      Bake:

                        Bake in the preheated oven for 15-20 minutes, or until a toothpick inserted into the center comes out clean. The edges should be lightly golden.

                          Cool Down:

                            Once baked, remove the muffin rings from the oven and allow them to cool in the pan for about 5 minutes. Then gently transfer them to a wire rack to cool completely.
