Ingredients

1 cup pineapple, diced

1 cup mango, diced

1 cup strawberries, hulled and quartered

1 cup kiwi, peeled and sliced

1 cup blueberries

1 banana, sliced

1/4 cup fresh mint leaves, chopped

Zest of 1 lime

2 tablespoons lime juice

2 tablespoons honey

A pinch of salt (to enhance sweetness)

Instructions

Prepare the Fruits: Start by washing all the fruits thoroughly. Dice the pineapple, mango, and kiwi into bite-sized pieces. Hull and quarter the strawberries, and slice the banana. Set aside the blueberries as they are.

Mix the Fruits: In a large mixing bowl, gently combine all the prepared fruits: pineapple, mango, strawberries, kiwi, blueberries, and banana. Be careful not to mash the bananas.

Make the Honey Lime Dressing: In a small bowl, whisk together the honey, lime juice, lime zest, and a pinch of salt until well combined and smooth.

Combine the Fruit and Dressing: Pour the honey lime dressing over the fruit mixture. Sprinkle the chopped mint leaves on top. Gently toss everything together until the fruits are evenly coated with the dressing.

Chill and Serve: For the best flavor, let the salad sit in the refrigerator for about 15-30 minutes to allow the flavors to meld. Serve chilled, either as a refreshing snack or as a vibrant side dish.
