Ingredients

1 pound large shrimp, peeled and deveined

8 ounces linguine or spaghetti

4 tablespoons unsalted butter

4 tablespoons olive oil

6 cloves garlic, minced

½ teaspoon red pepper flakes (adjust for heat preference)

Salt and black pepper, to taste

Juice of 1 lemon (about 2 tablespoons)

Zest of 1 lemon

¼ cup fresh parsley, finely chopped

Grated Parmesan cheese, for serving (optional)

Instructions

Cook the Pasta: Begin by cooking the linguine or spaghetti according to the package directions in a large pot of salted boiling water. Reserve about ½ cup of the pasta water, then drain and set aside.

Prepare the Shrimp: While the pasta cooks, pat the shrimp dry with paper towels and season with salt and black pepper.

Sauté the Garlic: In a large skillet over medium heat, melt 2 tablespoons of butter and 2 tablespoons of olive oil. Add the minced garlic and red pepper flakes, cooking until fragrant (about 1-2 minutes) but be careful not to burn the garlic.

Cook the Shrimp: Increase the heat to medium-high and add the seasoned shrimp to the skillet in a single layer. Cook for 2-3 minutes on each side, or until the shrimp turn pink and opaque. Remove the shrimp from the skillet and set aside.

Combine Ingredients: In the same skillet, add the remaining 2 tablespoons of butter, 2 tablespoons of olive oil, lemon juice, and lemon zest. Stir well to combine and let it simmer for about 1 minute.

Mix in Pasta and Shrimp: Add the drained pasta and cooked shrimp back to the skillet. Toss everything together, using the reserved pasta water as needed to create a light sauce that clings to the pasta. Adjust seasoning with more salt and black pepper if desired.

Garnish: Remove from heat and sprinkle with fresh parsley, giving it a final toss.

Serve: Plate the garlic butter shrimp scampi, and if desired, sprinkle with grated Parmesan cheese before serving.
