Ingredients

For the Rigatoni and Steak:

12 ounces rigatoni pasta

1 pound flank steak or sirloin

Salt and pepper, to taste

2 tablespoons olive oil

For the Garlic Butter Sauce:

1/2 cup unsalted butter (1 stick)

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1/4 cup fresh parsley, chopped

Zest of 1 lemon

For Garnishing:

1/2 cup freshly grated Parmesan cheese

Extra parsley for garnish

Lemon wedges (optional)

Instructions

Cook the Rigatoni: In a large pot, bring salted water to a boil. Add the rigatoni and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

Prepare the Steak: While the pasta cooks, season the flank steak generously with salt and pepper on both sides. Heat olive oil in a large skillet over medium-high heat. Add the steak and sear for about 4-5 minutes on each side for medium-rare, or to your desired doneness. Remove from heat, let it rest for 5 minutes, then slice thinly against the grain.

Make the Garlic Butter Sauce: In the same skillet, reduce the heat to medium and add the butter. Once melted, add minced garlic and red pepper flakes. Sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.

Combine Pasta and Sauce: Add the cooked rigatoni to the skillet with the garlic butter. Stir well to coat the pasta evenly. If the mixture appears dry, add reserved pasta water a little at a time until you reach your desired consistency.

Finish and Serve: Toss in the sliced steak, chopped parsley, and lemon zest. Mix thoroughly to combine. Remove from heat and sprinkle generously with grated Parmesan cheese. Garnish with additional parsley and serve with lemon wedges on the side for a fresh kick.

Enjoy: Dive into this hearty and flavorful dish, relishing every bite of the garlic butter, succulent steak, and cheesy rigatoni!
