Garlic Butter Tilapia with Spinach

4 tilapia fillets (about 6 oz each)

4 tablespoons unsalted butter

4 cloves garlic, minced

6 cups fresh spinach, washed and trimmed

2 tablespoons fresh lemon juice

Zest of 1 lemon

Salt and pepper, to taste

1 teaspoon red pepper flakes (optional for heat)

2 tablespoons fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Prepare the Tilapia: Pat the tilapia fillets dry with paper towels and season both sides with salt and pepper.

    Make the Garlic Butter: In a large skillet, melt 2 tablespoons of butter over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant but not browned.

      Cook the Tilapia: Carefully place the tilapia fillets into the skillet. Cook for about 3-4 minutes on each side until golden and cooked through. The fish should flake easily with a fork. Remove the fillets and set them aside on a plate.

        Sauté the Spinach: In the same skillet, add the remaining 2 tablespoons of butter and the fresh spinach. Sauté for about 2-3 minutes, just until wilted. Stir in the lemon juice, lemon zest, and red pepper flakes (if using). Season with additional salt and pepper as desired.

          Combine: Return the cooked tilapia to the skillet with the spinach, spooning some of the garlic butter sauce over the fish. Let everything cook together for another minute to meld the flavors.
