4 bone-in, skin-on chicken thighs

1 lb baby potatoes, halved

6 cloves garlic, minced

1/2 cup grated Parmesan cheese

1/4 cup olive oil

2 tsp dried Italian herbs (or a mix of oregano, basil, and thyme)

1 tsp garlic powder

1 tsp onion powder

Salt and pepper, to taste

Fresh parsley, chopped, for garnish

Lemon wedges, for serving

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Marinade: In a large mixing bowl, combine minced garlic, olive oil, dried Italian herbs, garlic powder, onion powder, salt, and pepper. Whisk together until well combined.

      Coat the Chicken: Add the chicken thighs to the marinade bowl. Rub the mixture all over the chicken, ensuring it's evenly coated. Let it marinate for about 15-20 minutes, if time allows.

        Prepare the Potatoes: In a separate bowl, toss the halved baby potatoes with half of the Parmesan cheese, salt, and pepper. Ensure they are evenly coated.

          Combine on the Baking Sheet: On a large, rimmed baking sheet, arrange the marinated chicken thighs skin-side up. Scatter the coated baby potatoes around the chicken.

            Sprinkle with Cheese: Sprinkle the remaining Parmesan cheese over the chicken and potatoes, ensuring every piece gets a delicious layer.
