Ingredients

1 pound fresh green beans, trimmed

1 cup breadcrumbs (panko for extra crispiness)

1 cup grated Parmesan cheese

4 cloves garlic, minced

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika (optional)

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Prepare the Green Beans: Rinse and trim the ends of the green beans. Pat them dry with a kitchen towel to remove excess moisture.

Set Up Breading Station: In one bowl, whisk the eggs. In a second bowl, combine the breadcrumbs, grated Parmesan, minced garlic, garlic powder, onion powder, smoked paprika (if using), salt, and pepper. Mix well.

Coat the Green Beans: Dip each green bean first in the egg, allowing the excess to drip off, then roll it in the breadcrumb mixture, ensuring it’s well-coated. Place the coated green beans on the prepared baking sheet.

Drizzle with Olive Oil: Once all the green beans are coated, drizzle them with olive oil and toss gently to ensure they are evenly coated.

Roast Until Crispy: Bake in the preheated oven for 15-20 minutes, or until the green bean fries are golden brown and crispy, flipping them halfway through for even cooking.

Garnish and Serve: Once cooked, remove from the oven and sprinkle with fresh chopped parsley for a pop of color. Serve warm with your favorite dipping sauce.
