4 medium zucchini, spiralized into noodles

3 tablespoons olive oil

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup bell peppers (red, yellow, or orange), thinly sliced

1 cup spinach, roughly chopped

½ cup grated Parmesan cheese

½ teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

Fresh basil, for garnish (optional)

Lemon wedges, for serving

Prepare the Zoodles: Start by spiralizing the zucchini into noodles using a spiralizer. If you don’t have one, you can use a julienne peeler. Pat the noodles dry with a clean kitchen towel to remove excess moisture.

    Heat the Oil: In a large skillet or wok, heat the olive oil over medium-high heat. Once hot, add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

      Sauté the Vegetables: Add the sliced bell peppers and halved cherry tomatoes to the skillet. Cook for about 3-4 minutes until the peppers start to soften.

        Add the Zoodles: Toss in the zucchini noodles and spinach. Stir-fry everything together for another 3-5 minutes until the zucchini is just tender but still has a slight crunch.
