Garlic Roasted Baby Potatoes

1.5 pounds baby potatoes (red or yellow)

4 cloves garlic, minced

3 tablespoons olive oil

1 teaspoon sea salt

½ teaspoon black pepper

1 teaspoon dried rosemary (or 2 teaspoons fresh, chopped)

1 teaspoon dried thyme (or 2 teaspoons fresh, chopped)

2 tablespoons freshly grated Parmesan cheese (optional)

Fresh parsley, chopped for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) to ensure it's hot and ready for roasting.

    Prepare the Potatoes: Wash the baby potatoes thoroughly and pat them dry. If they are larger than a golf ball, you may want to halve them; otherwise, keep them whole.

      Mix the Seasoning: In a large bowl, combine the minced garlic, olive oil, sea salt, black pepper, rosemary, and thyme. Stir well to create a flavorful oil mixture.

        Coat the Potatoes: Add the baby potatoes to the bowl with the garlic mixture. Toss them gently to ensure each potato is evenly coated with the oil and seasoning.

          Arrange for Roasting: Transfer the seasoned potatoes to a baking sheet lined with parchment paper or a lightly greased roasting pan. Spread them out in a single layer to promote even roasting.

            Roast in the Oven: Place the baking sheet in the preheated oven and roast for 30-35 minutes, or until the potatoes are tender and golden brown. Halfway through cooking (at around 15-20 minutes), give them a stir to ensure they roast evenly.

              Add Parmesan Cheese (Optional): In the last 5 minutes of roasting, sprinkle the grated Parmesan cheese over the potatoes if using, and return them to the oven. This will create a deliciously cheesy crust.
