½ cup granulated sugar

2 teaspoons baking powder

½ teaspoon baking soda

¼ teaspoon salt

2 tablespoons poppy seeds

1 large egg

¾ cup buttermilk (or milk + 1 tablespoon lemon juice)

⅓ cup vegetable oil

1 tablespoon lemon zest (freshly grated)

1 teaspoon vanilla extract

2 tablespoons fresh lemon juice

For the Glaze:

1 cup powdered sugar

2 tablespoons fresh lemon juice

Zest of 1 lemon

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly with cooking spray.

    Mix Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, salt, and poppy seeds until combined.
