For the Muffins:

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon baking soda

1 teaspoon salt

1/2 cup unsalted butter, melted

1/2 cup brown sugar, packed

2 large eggs

1 cup buttermilk

1 cup shredded sharp cheddar cheese

1/2 cup pickled jalapeños, chopped

1/4 cup scallions, sliced

For the Sliders:

1 pound ground beef (or plant-based alternative)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt & pepper to taste

8 slices of cheddar cheese

1/4 cup mayonnaise

1 tablespoon sriracha (optional, for extra heat)

Fresh cilantro or parsley, for garnish

Instructions
 

Prepare the Muffins:

    - Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or spray with cooking spray.

      - In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.

        - In another bowl, combine the melted butter and brown sugar until well mixed. Add the eggs and buttermilk, whisking until smooth.

          - Gradually fold the wet ingredients into the dry ingredients until just combined. Be careful not to overmix.

            - Gently fold in the cheddar cheese, jalapeños, and scallions.

              - Divide the batter evenly among the muffin cups and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let them cool slightly before removing from the tin.

                Prepare the Beef Patties:

                  - In a bowl, combine the ground beef, garlic powder, onion powder, salt, and pepper. Mix until just combined (do not overwork the meat).

                    - Shape the mixture into small patties, about the size of the muffin bottoms.

                      Cook the Patties:

                        - Heat a skillet over medium-high heat. Cook the patties for about 4-5 minutes on each side, or until cooked to your desired doneness. In the last minute of cooking, place a slice of cheddar cheese on top of each patty and cover the pan to let the cheese melt.

                          Assemble the Sliders:

                            - Slice the cooled jalapeño muffins in half horizontally.

                              - Spread a thin layer of mayonnaise mixed with sriracha on the inside of each muffin half (optional).

                                - Place a beef patty with melted cheese on the bottom half of each muffin, then top with the other half.

                                  - Garnish with fresh cilantro or parsley if desired.
