1 tablespoon olive oil

1 medium onion, chopped

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 teaspoon fresh ginger, grated

1 teaspoon ground turmeric

1 teaspoon cumin

8 cups low-sodium chicken broth

2 cups shredded rotisserie chicken (or cooked chicken, diced)

1 cup long-grain white rice

1 bay leaf

Salt and pepper, to taste

1 cup frozen peas

2 cups fresh spinach, roughly chopped

Juice of 1 lemon

Fresh parsley or cilantro, for garnish

Instructions
 

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes. Add the minced garlic, diced carrots, and diced celery, sautéing for another 5-7 minutes until they soften.

    Add Spices: Stir in the grated ginger, ground turmeric, and cumin. Cook for 1-2 minutes until fragrant.

      Simmer the Soup Base: Pour in the chicken broth, scraping up any bits from the bottom of the pot. Add the shredded chicken, rice, bay leaf, salt, and pepper. Bring the mixture to a boil, then reduce the heat to a simmer.

        Cook the Rice: Cover the pot and let it simmer for about 15 minutes, or until the rice is tender. Stir occasionally to prevent sticking.
