Ingredients

12 oz fresh mozzarella balls (bocconcini)

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably panko for extra crunch)

1 tsp garlic powder

1 tsp dried Italian seasoning

½ tsp paprika

Salt and pepper to taste

Vegetable oil for frying

Marinara sauce (for dipping)

Fresh parsley (for garnish, optional)

Instructions

Prep the Cheese: Drain the mozzarella balls from their liquid and pat them dry with paper towels to remove excess moisture. This will help them fry better and prevent oil splatter.

Setup Breading Station: In three separate bowls, set up your breading station:

      - In the first bowl, place the all-purpose flour seasoned with a pinch of salt and pepper.

        - In the second bowl, beat the two large eggs together and season with a bit of salt.

          - In the third bowl, combine the breadcrumbs, garlic powder, Italian seasoning, paprika, and a pinch of salt and pepper.

Bread the Mozzarella Balls: Take each mozzarella ball and roll it in the flour, ensuring it's fully coated. Shake off any excess flour. Dip the floured cheese into the beaten eggs, coating it completely, and then roll it in the breadcrumb mixture, pressing gently to adhere. Repeat this process for all mozzarella balls.

Chill: Once all mozzarella bites are breaded, place them on a baking sheet lined with parchment paper. Freeze the mozzarella bites for about 30 minutes. This step is crucial to ensure they hold their shape during frying.

Heat the Oil: In a large, deep skillet or pot, heat about 2 inches of vegetable oil over medium-high heat. You can check the oil’s readiness by dropping a small breadcrumb into it; if it sizzles, the oil is hot enough.

Fry the Bites: Carefully drop a few mozzarella bites into the hot oil at a time, ensuring not to overcrowd the pan. Fry them for about 2-3 minutes or until they turn a beautiful golden brown, turning occasionally for even cooking.

Drain the Excess Oil: Once fried, use a slotted spoon to transfer the mozzarella bites onto a plate lined with paper towels to absorb any excess oil.

Serve: Arrange the golden fried mozzarella bites on a serving platter. Serve hot with a side of marinara sauce for dipping and sprinkle with fresh parsley if desired.
