1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon ground turmeric

1/2 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon salt (or to taste)

1/4 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional for heat)

Juice of 1 lemon

4 large whole wheat or spinach wraps

1 cup fresh spinach leaves

1/2 cup cherry tomatoes, halved

1/4 cup red onion, thinly sliced

1/2 avocado, sliced

1/4 cup tahini sauce or yogurt (for drizzling)

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Roast the Chickpeas: Preheat your oven to 400°F (200°C). On a baking sheet, spread the drained chickpeas out in a single layer. Drizzle with 2 tablespoons of olive oil, then sprinkle with cumin, turmeric, smoked paprika, garlic powder, salt, black pepper, and cayenne pepper if using. Toss to coat evenly.

    Bake the Chickpeas: Roast in the preheated oven for about 20-25 minutes, or until the chickpeas are golden and crispy, shaking the pan halfway through to ensure even roasting.

      Prepare the Wraps: While the chickpeas are roasting, gather your wraps and lay them out flat on a clean surface.

        Assemble the Wraps: Once the chickpeas are done, remove them from the oven and let them cool for a few minutes. Start layering on each wrap: add a handful of fresh spinach, a few halved cherry tomatoes, some red onion slices, and a few pieces of avocado.
