200g fresh shrimp, peeled and deveined

200g scallops, cleaned and halved

200g mussels, scrubbed and de-bearded

150g squid, cleaned and sliced into rings

1 tablespoon olive oil

1 tablespoon unsalted butter

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup heavy cream

1 cup fish stock

1 tablespoon fresh lemon juice

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (optional)

Salt and freshly ground black pepper, to taste

1/4 cup fresh parsley, chopped (for garnish)

4 individual ceramic cassolette dishes or ramekins

Grated Gruyère cheese (for topping)

Instructions
 

Preheat Oven: Begin by preheating your oven to 180°C (350°F).

    Sauté Aromatics: In a large skillet, heat the olive oil and butter over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent and fragrant (about 2-3 minutes).

      Add Seafood: Introduce the shrimp, scallops, mussels, and squid to the skillet. Sauté for an additional 4-5 minutes until the seafood is opaque but not fully cooked.

        Incorporate Tomatoes and Spices: Stir in the halved cherry tomatoes, and then add the heavy cream, fish stock, lemon juice, smoked paprika, cayenne pepper (if using), salt, and pepper. Allow the mixture to simmer for about 5 minutes, letting the flavors meld together.

          Prepare Cassolette Dishes: Spoon the seafood mixture evenly into the individual cassolette dishes. Top each one generously with grated Gruyère cheese.

            Bake: Place the cassolette dishes in the preheated oven and bake for 15-20 minutes or until the cheese is bubbly and golden brown.

              Garnish and Serve: Once done, remove from the oven and allow to cool slightly. Garnish with freshly chopped parsley before serving.
