Ingredients

1 pre-made pie crust (9-inch, store-bought or homemade)

1 cup granulated sugar

1/4 cup unsweetened cocoa powder

1/4 cup cornstarch

1/8 teaspoon salt

2 cups whole milk

4 large egg yolks, lightly beaten

2 tablespoons unsalted butter

1 teaspoon pure vanilla extract

1 cup heavy whipping cream (for topping)

2 tablespoons powdered sugar (for whipped cream)

Chocolate shavings or cocoa powder (for garnish, optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare the Pie Crust: If using a store-bought crust, place it in a pie pan and bake according to package instructions until lightly golden. Allow it to cool completely before adding the filling.

Make the Chocolate Filling: In a medium saucepan, whisk together the granulated sugar, cocoa powder, cornstarch, and salt until well combined.

Add Milk: Gradually whisk in the whole milk until the mixture is smooth and free of lumps.

Cook the Mixture: Over medium heat, cook the mixture, constantly stirring, until it begins to thicken and bubble. This should take about 5-7 minutes.

Incorporate Egg Yolks: Remove the pan from heat. Slowly stir in a small amount of the hot mixture into the beaten egg yolks to temper them. Once combined, immediately whisk the egg yolk mixture back into the saucepan.

Add Butter and Vanilla: Continue to cook for another 2-3 minutes while stirring until it’s thick enough to coat the back of a spoon. Remove from heat and whisk in the butter and vanilla until fully incorporated.

Fill the Pie Crust: Pour the warm chocolate mixture into the cooled pie crust, smoothing it out with a spatula. Cover the pie with plastic wrap, pressing it directly onto the surface to prevent a skin from forming, and refrigerate for at least 4 hours, or until set.

Make the Whipped Cream: In a large mixing bowl, beat the heavy whipping cream with an electric mixer until soft peaks form. Gradually add in the powdered sugar and beat until stiff peaks form.

Serve: When ready to serve, remove the pie from the refrigerator. Top generously with whipped cream, and if desired, garnish with chocolate shavings or a sprinkle of cocoa powder. Slice and enjoy!
