Green Chili Chicken Sliders

1 lb ground chicken

2-3 green chilies, finely chopped (jalapeños or serranos work well)

1/2 cup breadcrumbs

1/4 cup fresh cilantro, chopped

1/4 cup red onion, finely diced

1 clove garlic, minced

1/2 tsp cumin powder

1/2 tsp smoked paprika

Salt and black pepper, to taste

1/2 cup shredded pepper jack cheese

Slider buns (mini burger buns)

Avocado slices (for topping)

Sour cream (for serving)

Instructions
 

Prepare the mixture: In a large mixing bowl, combine the ground chicken, finely chopped green chilies, breadcrumbs, cilantro, red onion, minced garlic, cumin, smoked paprika, salt, and black pepper. Mix gently until all ingredients are well incorporated.

    Form sliders: Divide the mixture into 8 equal portions and shape them into small patties, about 3 inches in diameter. Make a small indentation in the center of each patty to prevent them from puffing up while cooking.

      Cook the patties: Heat a non-stick skillet or grill over medium heat. Add a splash of olive oil to the skillet. Once hot, add the patties and cook for about 5-6 minutes on each side, or until they are golden brown and cooked through (internal temperature should reach 165°F).

        Add cheese: During the last minute of cooking, place a slice of pepper jack cheese on each patty. Cover the skillet with a lid to help melt the cheese.

          Assemble sliders: Toast the slider buns lightly on the skillet if desired. Place each chicken patty on the bottom half of a slider bun. Top with an avocado slice, and finish with a dollop of sour cream before placing the top half of the bun on.

            Serve: Arrange the sliders on a platter and serve warm.
