Ingredients

4 large eggs

1/4 cup milk

1 cup fresh spinach, chopped

1/2 cup green chilies, diced (fresh or canned)

1/2 cup shredded cheese (cheddar or pepper jack)

4 slices of thick-cut bread (sourdough or whole grain)

2 tablespoons olive oil or butter

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

Fresh cilantro or green onions for garnish (optional)

Instructions

Prepare the Egg Mixture: In a mixing bowl, whisk together the eggs and milk until well combined. Add in the garlic powder, onion powder, salt, and pepper. Stir in the chopped spinach and diced green chilies.

Cook the Egg Mixture: Heat a non-stick skillet or frying pan over medium heat. Add 1 tablespoon of olive oil or butter. Once hot, pour in the egg mixture. Cook gently, stirring occasionally, until the eggs are just set but still creamy, about 5-7 minutes. Remove from heat.

Toast the Bread: In another skillet (or the same one if cleaned out), add the remaining olive oil or butter. Toast the bread slices on medium heat for about 2-3 minutes on each side until they are golden brown and crispy.

Assemble the Melts: Once the bread is toasted, spoon an equal amount of the green chili egg mixture onto each slice. Top each with a generous sprinkle of shredded cheese.

Melt the Cheese: To melt the cheese, you can either place the assembled toasts under a broiler for about 2-3 minutes until bubbly and golden or cover the skillet with a lid for a few minutes on low heat.

Garnish and Serve: Remove from heat and garnish with fresh cilantro or green onions if desired. Serve immediately while hot and melty.
