1 pound ground turkey

1 cup fresh green chilies, diced (mild or hot, depending on preference)

1 small onion, finely chopped

2 cloves garlic, minced

1 cup shredded pepper jack cheese

1 teaspoon cumin

1 teaspoon paprika

Salt and pepper to taste

4 slices sourdough or whole wheat bread

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

1 tablespoon olive oil

Fresh cilantro or parsley, for garnish (optional)

Instructions
 

Prepare the Turkey Mixture: In a large skillet over medium heat, add the olive oil and sauté the onions until they become translucent, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.

    Cook the Ground Turkey: Add the ground turkey to the skillet, breaking it up with a spatula. Stir in the diced green chilies, cumin, paprika, salt, and pepper. Cook until the turkey is thoroughly cooked and no longer pink, about 6-8 minutes. Stir in the pepper jack cheese until melted and well combined. Remove from heat.

      Prepare the Bread: While the turkey mixture cools slightly, mix the mayonnaise and Dijon mustard in a small bowl. Spread the mixture on one side of each slice of bread.

        Assemble the Sandwiches: On the unspread side of two slices of bread, generously heap the turkey and green chili mixture. Top with the remaining slices of bread, spread side up.
