1 lb ground turkey

1 can (4 oz) diced green chilies, drained

1/2 cup onion, finely chopped

1 cup Monterey Jack cheese, shredded

1 cup sharp cheddar cheese, shredded

8 medium-sized flour tortillas

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon chili powder

Salt and pepper, to taste

2 tablespoons olive oil

Fresh cilantro, chopped (for garnish)

Sour cream or guacamole (for serving)

Instructions
 

Cook the Turkey: In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the chopped onion and sauté for about 2 minutes until translucent. Add the ground turkey to the skillet. Cook until browned and no pink remains, breaking it up with a wooden spoon (around 5-7 minutes). Drain excess fat if necessary.

    Season the Mixture: Stir in the diced green chilies, cumin, garlic powder, chili powder, salt, and pepper. Cook for an additional 2-3 minutes until everything is well combined and heated through. Remove from heat and let it cool slightly.

      Prepare the Tortillas: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

        Assemble the Quesadilla Squares: Lay out 4 tortillas on a flat surface. Spread the turkey mixture evenly over each tortilla, followed by a generous sprinkle of both Monterey Jack and cheddar cheese. Place the remaining 4 tortillas on top, pressing down gently.

          Bake: Heat the remaining tablespoon of olive oil in the skillet. Carefully transfer the quesadilla stacks to the skillet and cook for 2-3 minutes on each side, until the tortillas are golden and crispy.
