Grilled Chicken Apple Slaw Wraps

For the Chicken:

2 boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

½ teaspoon salt

½ teaspoon black pepper

Juice of 1 lemon

For the Apple Slaw:

2 cups green cabbage, thinly sliced

1 cup red cabbage, thinly sliced

1 large apple (like Granny Smith or Honeycrisp), thinly sliced or julienned

½ cup carrots, grated

¼ cup fresh cilantro, chopped

¼ cup green onions, chopped

½ cup Greek yogurt

1 tablespoon apple cider vinegar

1 tablespoon honey

Salt and pepper to taste

For Assembly:

4 large whole wheat or spinach tortillas

¼ cup feta cheese, crumbled (optional)

Marinate the Chicken: In a large bowl, mix olive oil, smoked paprika, garlic powder, salt, pepper, and lemon juice. Add the chicken breasts, turning to coat them well. Cover and marinate in the refrigerator for at least 30 minutes (or up to 2 hours for deeper flavor).

    Prepare the Slaw: In a separate large bowl, combine the green cabbage, red cabbage, apple slices, grated carrots, cilantro, and green onions.

      Make the Dressing: In a small bowl, whisk together Greek yogurt, apple cider vinegar, honey, salt, and pepper until smooth. Pour this dressing over the slaw mixture and toss everything until well combined. Set aside to let the flavors meld.

        Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred. Remove the chicken from the grill and let it rest for 5 minutes before slicing it thinly.

          Assemble the Wraps: Lay a tortilla flat on a clean surface. Place a generous amount of the apple slaw in the center, top with sliced grilled chicken, and sprinkle with feta cheese if using. Fold in the sides of the tortilla and then roll it up tightly from the bottom to the top.

            Serve: Cut the wraps in half diagonally and serve with extra slaw or a side of your favorite dipping sauce.
