For the Grilled Chicken Bites:

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon fresh lemon juice

Fresh parsley, chopped (for garnish)

For the Creamy Garlic Sauce:

½ cup mayonnaise

¼ cup sour cream or Greek yogurt

4 cloves garlic, minced

1 tablespoon lemon juice

1 teaspoon Dijon mustard

½ teaspoon salt

¼ teaspoon black pepper

1 tablespoon fresh chives, chopped (optional)

Instructions
 

Prepare the Chicken Bites:

    - In a mixing bowl, combine the chicken pieces, olive oil, garlic powder, smoked paprika, salt, black pepper, and lemon juice.

      - Toss the chicken until well coated. Cover and marinate for at least 30 minutes (up to 2 hours for more flavor).

        Make the Creamy Garlic Sauce:

          - In a medium bowl, whisk together the mayonnaise, sour cream or Greek yogurt, minced garlic, lemon juice, Dijon mustard, salt, and black pepper.

            - If using, add the chopped chives and mix well. Cover and refrigerate until serving.

              Preheat the Grill:

                - Preheat your grill to medium-high heat. If using skewers, soak them in water for about 30 minutes to prevent burning.

                  Grill the Chicken Bites:

                    - Thread the marinated chicken pieces onto skewers if desired, leaving a little space between each piece.

                      - Place the skewers or directly the chicken pieces on the grill. Cook for about 4-5 minutes on each side or until the chicken reaches an internal temperature of 165°F (75°C) and has nice grill marks.

                        Serve:

                          - Transfer the grilled chicken bites to a serving platter. Drizzle with the creamy garlic sauce or serve it on the side for dipping.
