Grilled Chicken Ranch Flatbreads

2 boneless, skinless chicken breasts

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

2 tablespoons olive oil

4 flatbreads (store-bought or homemade)

½ cup ranch dressing (store-bought or homemade)

1 cup shredded mozzarella cheese

1 cup baby spinach

½ cup cherry tomatoes, halved

¼ cup sliced red onion

Fresh cilantro or parsley, for garnish (optional)

Instructions
 

Prepare the Chicken: In a bowl, mix garlic powder, onion powder, paprika, oregano, salt, and pepper. Rub the spice mixture over the chicken breasts. Drizzle with olive oil and let marinate for at least 30 minutes.

    Grill the Chicken: Preheat your grill to medium-high heat. Cook the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Once done, let the chicken rest for a few minutes before slicing it into strips.

      Assemble the Flatbreads: While the chicken is resting, preheat your oven or a grill pan to medium heat. Place each flatbread on the grill/pan and spread a generous layer of ranch dressing evenly across each one.

        Layer the Ingredients: On top of the ranch, evenly distribute the mozzarella cheese, grilled chicken strips, baby spinach, cherry tomatoes, and red onion.

          Grill the Flatbreads: Cook the flatbreads for 5-7 minutes or until the cheese has melted and the edges of the flatbread are crispy.

            Garnish and Serve: Remove the flatbreads from the grill or oven. Top with additional ranch dressing and sprinkle with fresh cilantro or parsley if desired. Cut into wedges and serve hot.
