2 boneless, skinless chicken breasts

1 cup cherry tomatoes, halved

1 bell pepper (any color), sliced

1 medium zucchini, sliced

1 medium red onion, sliced

3 tablespoons olive oil

2 teaspoons garlic powder

1 teaspoon dried Italian herbs (oregano, basil, thyme blend)

Salt and pepper to taste

Aluminum foil (heavy-duty preferred)

Fresh parsley for garnish (optional)

Instructions
 

Prep the Foil Packs: Preheat your grill to medium-high heat. Cut four pieces of aluminum foil, about 12x12 inches each.

    Prepare the Chicken: In a bowl, drizzle the chicken breasts with 2 tablespoons of olive oil, then season with garlic powder, dried Italian herbs, salt, and pepper. Toss to ensure the chicken is evenly coated.

      Veggie Assembly: On each piece of foil, create a bed of sliced zucchini, bell pepper, red onion, and cherry tomatoes. Drizzle with the remaining tablespoon of olive oil. Season the veggies with salt, pepper, and a sprinkle of Italian herbs for added flavor.
