Grilled Chicken with Mango Salsa

For the Grilled Chicken:

4 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon cumin

Salt and black pepper to taste

Juice of 1 lime

For the Mango Salsa:

1 ripe mango, peeled and diced

1 small red onion, finely chopped

1 red bell pepper, diced

1 jalapeño, finely chopped (seeds removed for less heat)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt to taste

Marinate the Chicken: In a large bowl, mix the olive oil, garlic powder, paprika, cumin, lime juice, salt, and black pepper. Add the chicken breasts and coat them evenly with the marinade. Cover and refrigerate for at least 30 minutes (or up to 4 hours for more flavor).

    Prepare the Mango Salsa: In a medium bowl, combine the diced mango, red onion, red bell pepper, jalapeño, cilantro, lime juice, and salt. Toss gently to mix all the ingredients. Set aside to allow the flavors to meld.

      Preheat the Grill: Preheat your grill to medium-high heat (about 375°F - 400°F or 190°C - 200°C).

        Grill the Chicken: Remove the chicken breasts from the marinade and place them on the grill. Cook for 6-7 minutes per side, or until the chicken is cooked through (internal temperature should reach 165°F or 75°C). Remove from the grill and let it rest for a few minutes.
