Grilled Corn & Ricotta Toasts

4 large slices of rustic bread (such as sourdough or ciabatta)

1 cup fresh corn kernels (about 2 ears of corn)

1 cup ricotta cheese

1/4 cup fresh basil leaves, roughly chopped

1 tablespoon olive oil

1 tablespoon lemon juice

Salt and black pepper to taste

1/4 teaspoon red pepper flakes (optional)

Zest of 1 lemon

Extra basil leaves for garnish

Prepare the Corn: Start by heating a grill or grill pan over medium-high heat. Once hot, add the corn kernels and grill them for about 5-7 minutes, turning occasionally until they are slightly charred and tender. Remove from heat and allow to cool slightly.

    Make the Ricotta Mixture: In a medium bowl, combine ricotta cheese, chopped basil, olive oil, lemon juice, lemon zest, salt, and black pepper. Mix until well combined and creamy. Taste and adjust the seasoning as needed.
