Grilled Fish Tostadas

Ingredients
  

2 white fish fillets (such as tilapia or snapper)

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon garlic powder

1 teaspoon salt

1/2 teaspoon black pepper

8 small corn tostadas

1 cup shredded red cabbage

1 avocado, sliced

1 medium tomato, diced

1/4 cup cilantro leaves, chopped

1 lime, cut into wedges

Salsa Verde, for drizzling

Instructions
 

Prepare the Marinade: In a mixing bowl, whisk together the olive oil, smoked paprika, ground cumin, garlic powder, salt, and black pepper to create a marinade.

    Marinate the Fish: Place the fish fillets in the marinade, ensuring they are well-coated. Let them marinate for about 15-20 minutes.

      Preheat the Grill: While the fish marinates, preheat your grill to medium-high heat (around 400°F / 200°C).

        Grill the Fish: Once the grill is hot, place the marinated fish fillets directly on the grill grates. Grill for about 4-5 minutes on each side, or until the fish is cooked through and flakes easily with a fork. Remove from the grill and let it rest for a couple of minutes.

          Prepare the Tostadas: While the fish is resting, if desired, lightly grill the corn tostadas for 1-2 minutes on each side until warm and slightly crispy.

            Assemble the Tostadas: Flake the grilled fish into bite-sized pieces. On each tostada, generously pile on the shredded cabbage, followed by the flaked fish. Top with diced tomatoes, sliced avocado, and chopped cilantro.

              Finish with Garnish: Drizzle with Salsa Verde and serve with lime wedges on the side for an extra burst of flavor.
