Grilled Halloumi & Watermelon Salad

8 oz (225g) Halloumi cheese, sliced into 1/2-inch thick pieces

4 cups fresh watermelon, cubed

2 cups arugula or mixed greens

1/4 cup fresh mint leaves, chopped

1/4 cup crumbled feta cheese (optional)

2 tablespoons olive oil

1 tablespoon balsamic vinegar

Salt and pepper to taste

1 tablespoon lemon juice

1 teaspoon honey (optional)

Instructions
 

Preheat the Grill: Heat the grill to medium-high heat. If using a grill pan, place it on the stove over medium heat to preheat.

    Prepare the Halloumi: Brush the Halloumi slices lightly with olive oil on both sides. This helps in achieving a nice golden crust while grilling.

      Grill the Halloumi: Place the Halloumi slices on the grill and cook for 3-4 minutes on each side, or until they obtain grill marks and are slightly melted in the center. Remove from the grill and set aside.

        Mix the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, lemon juice, honey (if using), salt, and pepper. Adjust the seasoning to taste.

          Assemble the Salad: In a large bowl, combine watermelon cubes, arugula, and mint leaves. Drizzle the salad with the dressing and toss gently to combine.
