1 cup jasmine rice

1 cup coconut milk

1 cup water

1/4 teaspoon salt

1 tablespoon fresh lime juice

Zest of 1 lime

Fresh cilantro, chopped (for garnish)

Instructions
 

Marinate the Chicken:

    - In a large bowl, whisk together the pineapple juice, soy sauce, minced garlic, minced ginger, brown sugar, sesame oil, salt, and pepper.

      - Add the chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour (or up to 8 hours for best flavor).

        Prepare the Coconut Rice:

          - Rinse the jasmine rice under cold water until the water runs clear. This removes excess starch and helps achieve a fluffier texture.

            - In a medium saucepan, combine the rinsed rice, coconut milk, water, and salt. Stir well and bring to a boil over medium-high heat.
