Grilled Mushroom Pita Pockets

2 cups mixed mushrooms (such as cremini, shiitake, and portobello), sliced

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon dried thyme

Salt and pepper to taste

4 whole wheat pita pockets

1 cup baby spinach

½ cup crumbled feta cheese

½ cup roasted red peppers, sliced

¼ cup tahini sauce

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Grill: Preheat your grill to medium-high heat.

    Prepare the Mushrooms: In a mixing bowl, combine the sliced mushrooms, olive oil, minced garlic, dried thyme, salt, and pepper. Toss until the mushrooms are evenly coated.

      Grill the Mushrooms: Place the seasoned mushrooms on a grill pan or directly on the grill grates. Grill for about 5-7 minutes, stirring occasionally, until the mushrooms are tender and have nice grill marks. Remove from the grill and let them cool slightly.

        Warm the Pita Pockets: While the mushrooms are grilling, you can warm the pita pockets on the grill for about 1-2 minutes, flipping them halfway until they are soft and heated through.

          Assemble the Pita Pockets: Carefully open each pita pocket and stuff it with a generous handful of baby spinach, followed by the grilled mushrooms, roasted red peppers, and crumbled feta cheese.

            Drizzle with Tahini Sauce: Drizzle the tahini sauce over the filling in each pita pocket.

              Garnish and Serve: Sprinkle chopped fresh parsley on top for added freshness and flavor. Serve immediately while warm.
