Grilled Peach Burrata Toast

Ingredients
  

2 ripe peaches, halved and pitted

4 slices of rustic bread (such as sourdough or ciabatta)

8 ounces of burrata cheese

2 tablespoons of olive oil

1 tablespoon of balsamic glaze

Fresh basil leaves, for garnish

Sea salt, to taste

Freshly cracked black pepper, to taste

Instructions
 

Preheat the Grill: Heat your grill or grill pan to medium-high heat. Make sure it’s well-oiled to prevent sticking.

    Prepare the Peaches: Brush the cut sides of the peach halves with 1 tablespoon of olive oil.

      Grill the Peaches: Place the peaches cut side down on the grill. Grill for about 3-4 minutes or until they have nice grill marks and are slightly softened. Flip and grill the other side for an additional 2 minutes. Remove from the grill and let them cool slightly, then slice them into wedges.

        Toast the Bread: While the peaches are cooling, take your slices of bread and brush one side with the remaining tablespoon of olive oil. Grill the bread for about 2-3 minutes on each side or until it’s golden brown and crispy.

          Assemble the Toast: On each slice of grilled bread, place a generous dollop of burrata cheese. Arrange the grilled peach wedges over the top.

            Drizzle and Season: Drizzle the balsamic glaze over the peaches and burrata. Sprinkle with sea salt and freshly cracked black pepper to taste.
