Grilled Portobello Mushroom Burgers

4 large Portobello mushroom caps

1/4 cup balsamic vinegar

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper, to taste

4 whole grain or brioche burger buns

4 slices fresh mozzarella cheese

1 cup baby spinach

1 ripe avocado, sliced

1 large tomato, sliced

Optional: pesto or mayonnaise for spreading

Prepare the Marinade: In a small bowl, whisk together balsamic vinegar, olive oil, minced garlic, dried oregano, smoked paprika, salt, and pepper to create a marinade.

    Marinate the Mushrooms: Place the Portobello caps in a shallow dish and pour the marinade over them. Ensure each cap is well-coated. Let them marinate for at least 30 minutes, or up to 2 hours if you have time for deeper flavor.

      Preheat the Grill: Preheat your grill to medium-high heat (about 400°F or 200°C). If using a stovetop grill pan, heat it over medium-high heat.

        Grill the Mushrooms: Remove the mushroom caps from the marinade, allowing excess to drip off. Place them on the grill, gill side down. Grill for about 5-7 minutes on each side, until they are tender and nicely charred. During the last minute of grilling, place a slice of mozzarella on each mushroom to melt.

          Toast the Buns: While the mushrooms are grilling, cut the burger buns in half and lightly toast them on the grill until golden brown.

            Assemble Your Burger: On the bottom half of each toasted bun, layer baby spinach, the grilled Portobello with melted mozzarella, avocado slices, and tomato slices. Spread pesto or mayonnaise on the top half of the bun if desired.
