4 large Portobello mushrooms, cleaned and stems removed

1/4 cup balsamic vinegar

3 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional: 1/2 cup crumbled feta cheese or goat cheese (for topping)

Instructions
 

Marinate the Mushrooms: In a mixing bowl, whisk together the balsamic vinegar, olive oil, minced garlic, oregano, thyme, salt, and pepper.

    Prepare the Mushrooms: Place the cleaned Portobello mushrooms in a shallow dish or a ziplock bag. Pour the marinade over the mushrooms, ensuring they are thoroughly coated. Allow them to marinate for at least 30 minutes in the refrigerator, or up to 2 hours for deeper flavor.

      Preheat the Grill: Preheat your grill to medium-high heat. If using a grill pan, heat it over medium-high on the stovetop.

        Grill the Mushrooms: Remove the mushrooms from the marinade, allowing any excess liquid to drip off. Place the mushrooms gill side down on the grill. Grill for about 5-7 minutes, then flip and grill for an additional 5 minutes until they are tender and have nice grill marks.

          Add Cheese (optional): If using cheese, sprinkle it on the mushrooms during the last minute of grilling, allowing it to melt.

            Remove and Serve: Once grilled, remove the mushrooms from the grill and let them rest for a minute. Garnish with fresh parsley before serving. You can serve these delicious mushrooms on their own or as a burger substitute, in salads, or as a side dish.
