Grilled Salmon with Pineapple Salsa

For the Grilled Salmon:

4 salmon fillets (6 oz each), skin removed

2 tablespoons olive oil

2 tablespoons soy sauce

1 tablespoon honey

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

Salt and black pepper to taste

Juice of 1 lime

For the Pineapple Salsa:

1 cup fresh pineapple, diced

1/2 red onion, finely chopped

1 small red bell pepper, diced

1 jalapeño, seeded and minced (optional for heat)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt to taste

Instructions
 

Marinate the Salmon:

    - In a small bowl, whisk together the olive oil, soy sauce, honey, minced garlic, grated ginger, lime juice, salt, and black pepper.

      - Place the salmon fillets in a shallow dish and pour the marinade over them, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes (or up to 2 hours for deeper flavor).

        Prepare the Pineapple Salsa:

          - In another bowl, combine the diced pineapple, red onion, red bell pepper, jalapeño (if using), and chopped cilantro.

            - Drizzle with lime juice and add a pinch of salt. Mix gently to combine. Let the salsa sit for at least 15 minutes for the flavors to meld.

              Preheat the Grill:

                - Preheat your grill to medium-high heat. If using a charcoal grill, ensure the coals are glowing and ready.

                  Grill the Salmon:

                    - Remove the salmon from the marinade and lightly shake off excess. Place the fillets skin-side down on the grill.
