4 Italian sausages (pork or turkey)

2 bell peppers (any color), sliced

1 medium zucchini, sliced

1 medium yellow squash, sliced

1 red onion, thinly sliced

1 cup cherry tomatoes, halved

3 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh basil or parsley for garnish (optional)

Heavy-duty aluminum foil

Instructions
 

Prepare the Foil Packs: Cut four large squares of aluminum foil, approximately 12 inches by 12 inches each. Fold up the edges slightly to create a shallow bowl shape.

    Mix the Veggies and Seasoning: In a large bowl, combine the sliced bell peppers, zucchini, yellow squash, red onion, and cherry tomatoes. Add the minced garlic, olive oil, dried oregano, smoked paprika, salt, and pepper. Toss until the vegetables are well-coated in the seasoning.

      Assemble the Packs: Divide the vegetable mixture evenly among the foil squares. Place one sausage on top of the veggies in each pack.

        Seal the Foil Packs: Fold the aluminum foil over the vegetables and sausages, sealing tightly to prevent the steam from escaping. Ensure the packs are well-closed but leave some space for the steam to circulate.

          Grill the Packs: Preheat your grill to medium-high heat. Place the foil packs on the grill grates, close the lid, and cook for about 25-30 minutes, flipping halfway through, until the sausages are cooked through and the vegetables are tender.

            Serve: Carefully remove the foil packs from the grill. Open cautiously to avoid steam burns. Garnish with fresh basil or parsley if desired. Serve hot.
