Ingredients

4 swordfish steaks (about 6 oz each)

1/4 cup olive oil

1/4 cup fresh lemon juice (about 2 large lemons)

4 cloves garlic, minced

1 tablespoon fresh parsley, chopped

1 teaspoon fresh rosemary, chopped

1 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

Lemon wedges for serving

Instructions

Prepare the Marinade: In a mixing bowl, whisk together the olive oil, lemon juice, minced garlic, chopped parsley, rosemary, paprika, salt, and black pepper until well combined.

Marinate the Swordfish: Place the swordfish steaks in a shallow dish or a resealable plastic bag. Pour the marinade over the fish and ensure that each steak is coated evenly. Cover the dish or seal the bag, then refrigerate for at least 30 minutes to 2 hours to allow the flavors to infuse.

Preheat the Grill: Preheat your grill to medium-high heat (about 400°F/200°C). If using a charcoal grill, ensure the coals are hot and glowing.

Grill the Swordfish: Remove the swordfish from the marinade, allowing any excess to drip off. Place the steaks on the grill and cook for about 4-6 minutes per side, or until the fish flakes easily with a fork and has nice grill marks. Avoid overcooking to keep the fish moist.

Serve: Remove the swordfish from the grill and let it rest for a minute. Serve with lemon wedges on the side for squeezing over the fish. Optionally, garnish with extra parsley for a fresh touch!
