1 medium-sized seedless watermelon

1 cup heavy cream

1 cup coconut milk (or your preferred milk)

½ cup granulated sugar

1 teaspoon vanilla extract

A pinch of sea salt

1 tablespoon fresh mint leaves, chopped (optional, for garnish)

Zest of 1 lime (optional, for garnish)

Instructions
 

Prepare the Watermelon:

    - Cut the watermelon in half. Use one half for grilling. Slice the other half into bite-sized cubes and set aside for serving later.

      Grill the Watermelon:

        - Preheat the grill to medium-high heat.

          - Cut the half of the watermelon into thick wedges (about 1-2 inches).

            - Lightly brush the wedges with olive oil to prevent sticking, and place them on the grill.

              - Grill for about 3-4 minutes on each side, until grill marks appear and the fruit softens slightly.

                - Remove the watermelon from the grill and let it cool. Once cooled, cut the grilled watermelon into smaller pieces.

                  Make the Ice Cream Base:

                    - In a blender, combine the grilled watermelon pieces, heavy cream, coconut milk, granulated sugar, vanilla extract, and sea salt.

                      - Blend until smooth and creamy, ensuring there are no chunks of watermelon left.

                        Chill the Mixture:

                          - Transfer the blended mixture to a bowl and cover it with plastic wrap.

                            - Refrigerate for at least 1-2 hours, or until it is thoroughly chilled.

                              Churn the Ice Cream:

                                - Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions, typically around 20-30 minutes, until it reaches a soft-serve consistency.
