2 medium zucchinis

8 ounces fresh mozzarella cheese, sliced

2 large tomatoes, sliced

1 cup fresh basil leaves

2 tablespoons extra virgin olive oil

1 tablespoon balsamic vinegar

Salt and pepper to taste

Optional: 1 teaspoon Italian seasoning or fresh oregano

Prep the Zucchini: Slice the zucchinis lengthwise into about ¼-inch thick planks. If they are very watery, you can lightly salt them and let them sit for about 10 minutes to draw out moisture. Pat them dry with a paper towel.

    Grill the Zucchini: Preheat your grill or grill pan over medium-high heat. Brush the zucchini slices with olive oil on both sides and sprinkle with salt, pepper, and optional Italian seasoning. Grill zucchini slices for about 3-4 minutes on each side, or until they have nice grill marks and are tender. Remove from the grill and let cool slightly.

      Assemble the Stacks: On a serving platter, start building your stacks by layering a slice of grilled zucchini, followed by a slice of mozzarella cheese, a slice of tomato, and a few fresh basil leaves. Repeat this arrangement until you reach the desired height for each stack (usually two to three layers works well).

        Drizzle with Dressing: In a small bowl, whisk together the remaining olive oil and balsamic vinegar. Drizzle this dressing over the assembled stacks, ensuring each stack gets a sprinkle of flavor.
