4 medium zucchini, sliced into ½-inch rounds

1 tablespoon olive oil

1 teaspoon smoked paprika

Salt and pepper, to taste

1 bell pepper (red or yellow), diced

1 cup cherry tomatoes, halved

1 small red onion, thinly sliced

1 cup corn (grilled, fresh, or canned)

½ cup crumbled feta cheese

¼ cup fresh basil leaves, chopped

2 tablespoons balsamic vinegar

1 tablespoon lemon juice

Preheat the Grill: Heat your grill to medium-high heat (about 400°F / 200°C).

    Prepare the Zucchini: In a large bowl, toss the zucchini slices with olive oil, smoked paprika, salt, and pepper until well coated.

      Grill the Zucchini: Place the seasoned zucchini rounds directly on the grill grates. Grill for about 3-4 minutes on each side, or until there are nice grill marks and the zucchini is tender but still retains some crunch. Remove from the grill and let cool slightly.
