1 cup rolled oats (gluten-free if needed)

1 scoop vanilla protein powder

1 tsp baking powder

1/2 tsp cinnamon

1/4 tsp salt

1 cup almond milk (or any preferred milk)

1 tbsp maple syrup (or sweetener of choice)

1 tsp vanilla extract

1/2 cup mixed berries (fresh or frozen; blueberries, strawberries, raspberries)

Cooking spray or a small amount of coconut oil for the waffle iron

Instructions
 

Blend the Dry Ingredients: In a blender or food processor, add the rolled oats and blend until it turns into a fine flour. Add the protein powder, baking powder, cinnamon, and salt, then pulse briefly to combine.

    Combine Wet Ingredients: In a separate bowl, mix the almond milk, maple syrup, and vanilla extract until well combined.

      Create the Batter: Slowly pour the wet ingredients into the dry ingredients and blend until smooth. Let the batter sit for about 5 minutes to thicken slightly.

        Fold in the Berries: Gently fold the mixed berries into the batter, taking care not to crush them.

          Preheat the Waffle Iron: Preheat your waffle iron according to the manufacturer’s instructions. Lightly grease it with cooking spray or a little coconut oil.

            Cook the Waffles: Pour an appropriate amount of batter into the preheated waffle iron (typically around 1/2 to 3/4 cup, depending on your iron). Close the lid and cook for about 4-5 minutes, or until the waffles are golden brown and cooked through.
